After being a Registered Nurse for many years to mostly high risk pregnant woman, and very critical infants I felt like I understood enough about pregnancy and what contributed to a health pregnancy until I found myself 4 months pregnant, and diagnosed with early onset gestational diabetes.
Although my dietary intake was a factor, it wasn’t the sole culprit of gestational diabetes in my pregnancy. I had been doing my best to eat only the very best of fruits, veggies and health sources of protein. However, due to Polycystic Ovarian Syndrome, diagnosed at 20 years old, I had insulin resistance and high blood glucose levels.
I was placed on oral insulin and told to avoid all processed carbohydrates and provided with this black and white menu that had as much taste as it has color. It urged me to fill up on salads, quinoa, vegetables, and protein no larger than the size of my palm.
It worked temporarily, but the pregnancy cravings came back and it got harder and harder to control my cravings. The first time I cheated on my diet, I snuck to a local supermarket at 6:00am. I tried not to dash to the cashier with the chocolate bar in hand, but who was I kidding? I was 5 months pregnant and hadn’t had sugar in what seemed lifetimes. I swiped by debt carb and flew to the car. I sat in the car and devoured the chocolate bar. That was the first time, I felt Logan kick. It felt like a butterfly fluttering, It was so soft and subtle that if I had been doing anything else other than savoring this chocolate bar in an empty supermarket parking lot I may have missed it. What was almost impossible to miss was what would happen next. My heart instantly swell with love and for the first time, I understood what it meant to have someone know your heartbeat from the inside.
Shortly after, I lost Logan. While the circumstances surrounding my 2nd trimester loss remain unclear. All fingers pointed to my endocrine disorder (PCOS) that caused a hormonal crash and an inability to stabilize my blood glucose levels despite my best efforts.
Love Served Warm is my life’s work. It is an invitation to my dinner table. It is a cultivation of all that I’ve learned through low carb Keto nutrition, that focus on good health and weight management. It is my goal to teach woman with endocrine disorders and all others alike how to decrease their risk of alzheimer disease, diabetes, insulin resistance, infertility, and a slew of other health problems directly related to our addiction of carbs and sugar.
