Keto Athenian Inspired Shrimp
Keto Greek Inspired Athenian shrimp is a delicious rendition of one of my favorite dishes. In the spirit of low carb greatness, the shrimp is nestled over a bed of lemon butter asparagus. Topped with feta cheese, this is sure to hit the spot without leaving you feeling weighed down. This light and fresh meal is a great staple to any keto diet.

Greek inspired shrimp and lemon butter aparagus
Instructions
  1. Mince 4 cloves of garlic. Add to a frying pan on high heat. Add Grassfed Butter and allow garlic to cook until brown. Careful not to scorch the garlic.

  2. Once Garlic is browned, add 2 cups of dry wine. Lower heat to medium/low to allow wine to reduce for 10 minutes stirring occasionally.

  3. Cut the cherry tomato and cilantro and set aside.

  4. Add Halfed cherry tomatoes to wine reduction and increase the heat to medium. Stir occasionally until tomatos blister and release humidity (5-10 minutes)

  5. Once cherry tomatos are blistered, lower the heat to medium/low.

  6. Add in cilantro and stir in.
  7. Add 1 pound of uncooked, unpeeled shrimp into tomato wine mixture. Bring heat to medium. Allow shrimp to turn opaque. 2-3 minutes each side.
  8. Set the shrimp to the side
  9. Cut up aparagus into 2 inch pieces. Place in medium heat pan with grassfed butter and lemon slices.
  10. Cook apargagus and lemon until aparagus is fork tender.
  11. Serve shrimp over Lemon Butter aparagus and top with feta cheese. Enjoy!
