Low Carb Keto Blueberry Sauce

  • 1/4 cup Blueberries
  • 1/4 tbsp Xanthan Gum
  • 1 tbsp Monk Fruit Sweetener
  • 1/2 tbsp vanilla Extract
  • 1 tbsp Water


  • Add blueberries to a hot pan
  • Add 1 tbsp of water
  • Once blueberries begin to blister, add xanthan gum
  • Step 4 Mix thoroughly and add vanilla extract
  • Allow blueberries to blister over medium heat, adding water in 1 tbsp increments until desired thickness is achieved
  • Allow cooling for 5 minutes
  • ┬áRemove from heat and allow the mixture to cool
  • Place in an airtight container in the fridge or top something needing a little pizazz!
