Low Carb Keto Blueberry Sauce

Ingredients
  

  • 1/4 cup Blueberries
  • 1/4 tbsp Xanthan Gum
  • 1 tbsp Monk Fruit Sweetener
  • 1/2 tbsp vanilla Extract
  • 1 tbsp Water

Method
 

  1. Add blueberries to a hot pan
  2. Add 1 tbsp of water
  3. Once blueberries begin to blister, add xanthan gum
  4. Step 4 Mix thoroughly and add vanilla extract
  5. Allow blueberries to blister over medium heat, adding water in 1 tbsp increments until desired thickness is achieved
  6. Allow cooling for 5 minutes
  7.  Remove from heat and allow the mixture to cool
  8. Place in an airtight container in the fridge or top something needing a little pizazz!
  9. Serve with Love and enjoy
