  1. 1/4 Cup Blueberries
  2. 1/4 tbsp Xanthan Gum
  3. 1 tbsp Monk Fruit Sweetener
  4. 1/2 tbsp vanilla Extract
  5. Water
  1. Add blueberries to hot pan.
  2. Add 1 tbsp of water.
  3. Once blueberries begin to blister, add xanthan gum.
  4. Mix throughly and add vanilla extract.
  5. Allow blueberries to blister over medium heat, adding water in 1 tbsp increments until desired thickness is achieved.
  6. Allow to cook for 5 minutes.
  7. Remove from heat and allow mixture to cool.
  8. Place in an airtight container in the fridge or top something needing a little pizaz!
