Keto Low Carb Cauliflower Fried Rice

This keto, low carb, cauliflower fried rice is my go-to dinner side dish.

One of my biggest struggles going Low Carb, Keto, has been my long battle and addiction to rice. Its something that has been ingrained in me, culturally, since birth. Giving up rice felt like giving up a piece of my identity.

How to make Cauliflower Fried Rice?

 

Low Carb Keto Fried Rice

Cauliflower fried rice is a simple, yet effective recipe.  Its that’s not only delicious but also effective in battling rice cravings. Cauliflower can be turned into rice in two ways. The first is my favorite and easiest. Store-bought cauliflower, as a mom, is easiest to just easier to pop in the fridge prepared for whenever you need it. The second option is to buy a whole fresh cauliflower and grate down into the rice.

Start Cooking

start cooking with 2 fresh scrambled eggs. Fry these over medium heat.

Gather eggs, riced cauliflower, minced garlic, and herbed olive oil mixture into a frying pan on medium heat.

Combine all Ingredients

Combine all ingredients, and move fast. Cooking the cauliflower fried rice too slowly can cause the dish to perspire and make the rice mushy. The key to the rice consistency is cooking on medium to high heat and moving the contents of the dish around frequently to avoid scorching the rice.

Keto Low Carb Cauliflower Fried Rice

Prep Time 10 mins
Cook Time 10 mins

Ingredients
  

  • 1 bag riced cauliflower or Medium cauliflower head
  • 2 whole Garlic cloves minced
  • 2 whole Scrambled eggs
  • 3 shakes Soy sauce or until desired color and taste
  • 2 tbsp Olive oil
  • Cilantro
  • 1 tbsp Garlic Powder
  • 1 tbsp Onion Powder

Instructions
 

  • Cook eggs on medium heat
  • Add all ingredients except the soy sauce and stir fry on high heat until cauliflower is cooked thoroughly
  • Add soy sauce at the end, add the desired amount to your liking right before serving
  • Serve with Love and Enjoy!
