Cauliflower Low Carb, Keto Mac, and Cheese is definitely a comfort food in my book.
While this recipe does contain dairy, it is great for a family gathering or one of those nights you need food that provides comfort. The great thing about this lifestyle is that you do not have to restrict yourself.
A Low Carb Lifestyle allows for tons of flexibility when it comes to meal planning.
Fresh Ingredients
Fresh ingredients make the difference in low carb, keto lifestyles. There is no shortage of processed foods.
This recipe calls for a fresh head of cauliflower. It is important for the cauliflower to be fresh so that it can have a pasta-like texture.
Let’s face it… it’s all about getting as close to the fire as possible without sacrificing any flavor.

Gather all of your ingredients in one place. Cauliflower cooks fast and it’s important to marry all of the ingredients together quickly before your cauliflower turns into a mush.

DO NOT OVER BOIL!
The other important tip for this recipe is DO NOT OVER BOIL!
In order to get that pasta-like consistency, the cauliflower cannot be overcooked. My suggestion for not overcooking your concoction is to buy a small strainer that sits between the cauliflower and the boiling water, as pictured below.
Don’t Mix, Fold in Ingredients
Try to avoid mixing your ingredients together. Make sure to fold in the ingredients while trying not to disrupt the cauliflower too much. Carefully fold in all of the ingredients and make sure to combine fully. I would hate for you to be enjoying your meal and end up with a mouth full of cream cheese or some other unlikely flavor you didn’t expect to encounter.
Get Ready for the Fire
Here comes my favorite part, get ready for the fire. All of the ingredients are combined and cooked. I can feel my mouth watering already. Top with cheddar cheese and bacon. You can omit the bacon too if pork isn’t your thing. Transfer contents into an oven-safe dish and cook until cheese at the edges of the baking pan turns to a nice brown.

Keto Low Carb Cauliflower Mac and Cheese
Ingredients
- 1/2 Cauliflower Head
- 2 tbsp Cream Cheese
- 1 tbsp Sour Cream
- 1/2 tbsp Turmeric Powder
- 1/2 tbsp Onion Powder
- 1/2 tbsp Garlic Powder
- 1 pinch Pink Himalayan Salt
- 2 cup Fine Cut Cheddar cheese
Instructions
- Chop cauliflower head into large pieces
- Steam cauliflower for 5-10 minutes until fork tender
- Drain water and place in an oven-safe container
- Mix in cheddar cheese, turmeric powder, onion powder, garlic powder, pink Himalayan salt, cream cheese, and sour cream
- Place all ingredients in an oven-safe container
- Cook for 45 minutes or until cheese is brown at edges
